Spaghetti Vongole & 2019 Cosa Nostra Vermentino

Spaghetti Vongole & 2019 Cosa Nostra Vermentino

“Spaghetti vongole is a quick and easy seafood pasta that partners up beatifully with the zingy, zesty freshness of our 2019 Cosa Nostra Vermentino.” ~ Rebecca Santolin

95 POINTS “Light yellow hue, with intense spicy aromas which include nutty barrel-ferment nuances. The wine is juicy and gently tropical in the mouth, with good acid balance, the barrel use adds an extra layer to the flavour. Very long persistence. Delicious wine, not too dry and not too sweet.” ~ Huon Hooke, The Real Review, 2020.

  • 3 fresh long red chillies, seeded and finely chopped
  • 1 dried small red chilli, finely ground, optional
  • 2 cloves of garlic, finely chopped
