"Adrian and Rebecca Santolin describe themselves as lo-fi winemakers, that is, minimal intervention. Small batches, wild ferments, no fining, vegan-friendly. No shortage of buzz-words, and the wines are very good indeed.
The colour is a pale coral-pink hue, which derives from the pinot grigio grapes which are pink when ripe. There are smoky strawberry, mushroom, earthy/undergrowth aromas and it bears a resemblance to pinot noir rosé, the palate soft and rounded, with a rich, dry finish augmented by balanced acidity. A very worthy style that offers a lot more than your standard common-or-garden pinot grigio. (Screwcap)"
