This 2019 Chardonnay is produced from fruit grown on a single block from the Willowlake vineyard in Gladysdale, Upper Yarra Valley. It has been crafted with minimal intervention, using natural fermentation, no fining and only a single filtration before bottling. Hand picking commenced on March 8th 2019. Grapes were chilled overnight then whole bunch pressed, and the juice transferred to a mixture of new and old French oak barrels. A portion of the grapes were fermented on skins to add texture and mouthfeel. Once dry, the wine was left to mature on lees until blending, where the wine underwent a single, course filtration before bottling. Additional Notes: Suitable for vegans

"Flavours build, moving from citrus to stone fruit, fig to creamed honey. The palate fills out with richness and leesy influences plus well-handled phenolics. Then wham! A sprint home with its acidity."
