2020 Santolin Gladysdale Pinot Noir

Hand picking commenced on March 29th 2020. A small parcel was put into a fermentation vessel for whole bunch carbonic maceration while the remaining fruit was fully destemmed into open pots for whole berry fermentation with indigenous yeast. The reason for this is that wild yeast shows the true characters of the variety, region and especially the unique flavours of the vineyard. The open pots were gently hand plunged 1-2 times daily. On completion of fermentation the wine was pressed to a selection of new and old French oak barrels. The wine underwent natural malo-lactic fermentation. Wine was not filtered or fined prior to bottling. Suitable for vegans

"A lighter colour of good hue. Pot-pourri, toasty barrels and chocolate to sniff, indicating generous oak treatment. Overtones of roasting meats and the wine is elegant and medium weighted in the mouth, with light fine-grained tannins, lovely fruit-sweetness and good balance. Delicious pinot.
