Both the Shiraz and Cabernet fruit came from the Yarraland Vineyard in the Yarra Valley. Fruit was handpicked then destemmed intosmall open pots with indigenous yeast. The wild yeastreflects and integrates the true characters of thevarieties, region and in particular, the unique flavours ofthe vineyard.The open pots were gently hand plunged twice daily,then pressed when dry to a selection of French oakhogsheads (40% new) for 18 months.
