These lo-fi, single vineyard wines are created to be a pure expression of the site, the region and variety. The fruit is handpicked and brought into the winery where it is left to ferment naturally using wild yeasts. Fermentation temperatures are left to run naturally. We use carefully selected French oak barrels from cooperage’s and forests that we’ve found bring out the best qualities of the fruit from each vineyard. Fining agents are not used and the red wines are not filtered, in order to retain flavour and the unique nuances of each site.

This wine is produced from fruit grown on a single block in the Syme on Yarra Vineyard, Gruyere. This wine has been hand crafted with minimal intervention. Hand picked on February 26th, 2018. Not fined or filtered. Suitable for vegans.

A pallid ruby, segueing to sour cherry, red plum, strawberry, orange zest and cranberry scents, before a juicy stream of acidity carries the fray long. A herbal twist, too, with wood smoke, turmeric and sandalwood sousing the finish."
