We literally want to create ‘our thing.’ Small batches of adventurous experimentation, teamed with our minimal winemaking philosophy to best capture the unique and intrinsic nature of these alternative varietals and blends.

This first release of Pinot Gris in our Cosa Nostra range has been produced using fruit grown from a single vineyard in the Yarra Valley. Total production: 2 tonne = 5 barrels. (2 barrels: wild fermented) (3 barrels: various aromatic yeast added) Hand picked. Whole bunch pressed. Old French oak. Fermented to dryness. 4 months on lees. No fining. Bottled Aug 2017. Additional Notes: Suitable for vegans
