"Good depth of colour with very little youthful tints remaining, the bouquet likewise dominated by toasty/earthy/woodsy and meat-stock developed characters, the palate likewise dominated by tertiary characters of considerable complexity and appeal. The finish is long and appetisingly dry thanks to tannin and development. Yes it's forward, but there's a lot to like."

Both the Shiraz and Cabernet fruit came from the Yarraland Vineyard in the Yarra Valley. Fruit was handpicked then destemmed intosmall open pots with indigenous yeast. The wild yeastreflects and integrates the true characters of thevarieties, region and in particular, the unique flavours ofthe vineyard.The open pots were gently hand plunged twice daily,then pressed when dry to a selection of French oakhogsheads (40% new) for 18 months. Suitable for vegans
