2014 Santolin Sauvignon


Complex, mineral and flinty. Hints of citrus and gooseberry. Lively, fine and textural. Crisp and fresh with flavours of citrus and guava. Subtle complexity from seasoned oak.


This 2014 Sauvignon has been produced from fruit grown on a single block at the Yarraland vineyard in Chirnside Park. It has been crafted with minimal intervention, utilising wild fermentation and partial malolactic. No fining was used in the making of this wine.

The 2013/14 growing season presented some challenges.

Early frosts and a hot summer reduced yields, up to 80% in some cases. Quantity was down, but the quality of the small amount of remaining fruit was good. Hand picking commenced on March 13th, 2014. Grapes were then chilled overnight. They were whole bunch pressed and the juice went straight to seasoned French oak barrels for fermentation. The wine was aged on lees until December and received a single Filtration prior to bottling. Bottled December 2014.
