2014 Santolin Nero d’ Avola


Fresh red berries, hint of rose petals, savoury spice. Dense, rich colour, medium bodied, savoury boysenberry, blueberries.

This 2014 Nero d’Avola has been produced from fruit grown at Chalmers vineyard in Heathcote, Victoria. It has been hand crafted using whole berries, wild fermentation and minimal intervention. No fining was used in the making of this wine.

The 2013/14 growing season presented some challenges. Early frosts and a hot summer reduced yields, up to 80% in some cases. Quantity was down, but the quality of the small amount of remaining fruit was good.

Hand picking commenced on March 12th, 2014. Grapes were then chilled overnight. 100% whole berries were transferred to an open fermenter then left to ferment with wild yeasts over a 21 day period with regular hand plunging. Once dry, the ferments were pressed to seasoned French oak barrels where they underwent malolactic fermentation. On completion of malo, the wine was sulphured then matured on lees until blending. Wine was not fined and given a single, gentle filtration before bottling.
